Step 1

Drain, then rinse the chickpeas.

Lemon

Step 2

Prepare the salad dressing. In a bowl, mix : the lemon juice & a teaspoon of olive oil per person. Season with salt & pepper.

Arugula
Roasted bell peppers

Step 3

In a salad bowl, add : the arugula, grilled peppers, & chickpeas. Pour the dressing over & mix well to combine.

Feta cheese (block)

Step 4

Serve the salad & top with crumbled feta. Re-season to taste & enjoy !
