Step 1

Cut off the top and bottom of the orange, then cut off the peel, removing all of the white pith. Cut out the segments, removing any membrane or seeds, to form wedge-shaped supremes.

Chickpeas (canned)
Orange
Parsley (fresh)
White wine vinegar
Salad (lamb's lettuce-arugula mix)

Step 2

Rinse and drain the chickpeas, then transfer them to a shallow bowl with the orange supremes, chopped parsley, salad, vinegar and 1 TB olive oil per portion. Season with salt and pepper, mix and serve!
