A melt-in-the-mouth chicken accompanied by a creamy pesto polenta: what more could you ask for!
Make sure you have...
Stovetop, Pot (small), Frying pan
Step 1
Season your chicken with salt and pepper on both sides. In order for your chicken to be crispy, you can pass it in a little flour before cooking.
Step 2
In a hot skillet, add a drizzle of olive oil and brown the chicken for 4-5 minutes on each side over medium heat until golden brown. Set aside.
Step 3
Meanwhile, boil the milk in a saucepan, season with salt and pepper.
Step 4
Then add the polenta while stirring for 2 to 3 minutes over low heat until you get a creamy texture.
Step 5
Once the polenta has thickened, add a small piece of butter if you wish and the grated parmesan. Mix well and set aside.
Step 6
Add the polenta to a plate with a drizzle of pesto. Place the chicken on top and add a little grated parmesan if you have any left. Serve with a green salad seasoned according to your tastes, it's ready!
