When the leaves start falling...butternut squash comes calling !
Make sure you have...
Stovetop, Pot (small), Oven
Step 1
Preheat the oven to 220°C. Peel & slice the butternut squash in half lengthwise. Deseed & dice the squash into bite-sized pieces.
Step 2
Wash & cut the cauliflower into bite-sized florets.* *Check out our tips for this step
Step 3
Line a sheet tray with parchment paper & add the butternut & cauliflower. Add a drizzle of olive oil, salt & pepper. Optional : garlic powder is the perfect addition, if you have some ! Toss everything to evenly coat. Roast in the oven for 20 mins at 220°C.
Step 4
Meanwhile, in a pot of salted boiling water, cook the orzo according to package instructions. Drain & set aside.
Step 5
After 20 mins, remove the veggies from the oven & sprinkle with parmesan cheese. Toss them all together.
Step 6
Add the chicken to the tray with the veggies. Add a drizzle of olive oil, salt & pepper, then season with your favorite spices - e.g : garlic powder & paprika. Return everything to the oven to roast for 15-20 min at 220°C.
Step 7
Meanwhile, if you have some, rinse & finely chop the parsley.
Step 8
Season the drained orzo with a drizzle of olive oil, the chopped parsley (optional) & a pinch of salt. Mix it all together.
Step 9
In the final two mins of cooking time, remove the veggies & chicken from the oven. Top the veggies with grated cheese & return to the oven for 1-2 mins, until the cheese has melted.
Step 10
If desired, slice up the roasted chicken.
Step 11
Serve the roasted chicken with the cheesy veggies & herby orzo. Enjoy !
