Potatoes (baked/mashed)

Step 1

Preheat the oven to 190°C. Peel & dice the potatoes.

Brussels sprouts (fresh)

Step 2

Wash & slice the Brussels sprouts in half.

Balsamic vinegar

Step 3

On a sheet tray lined with parchment paper, add the Brussels sprouts. Drizzle with olive oil & toss to coat. Season with salt, pepper & the balsamic vinegar. Toss & roast for 20-25 min at 190 °C.

Step 4

Meanwhile, in a pot of salted boiling water, add the potatoes & cook for 15 min, over medium heat.

Chicken breast

Step 5

Meanwhile, heat a drizzle of olive oil in a pan, over medium-high heat. Add the chicken to the pan & cook for 4-5 min on each side. Season with salt & pepper.

Milk (whole)

Step 6

Once the potatoes are soft, drain them. Using a potato masher or a fork, mash the potatoes in the pot until softened. Stir in the butter (optional), milk, salt & pepper. Mash again until smooth.

Step 7

Once golden & crisp, remove the Brussels sprouts from the oven. Serve them alongside the mashed potatoes & grilled chicken. Re-season to taste & enjoy !
