Ingredients

Utensils

Stovetop, Pot (small) and Air fryer.

Recipe

Red onion

Step 1

Peel & cut the red onions into thin quarters.

Zucchini

Step 2

Wash & cut the zucchini in half lengthwise, then diagonally.

Lemon

Step 3

Wash & cut the lemon into thin slices.

Step 4

In the air fryer basket with the rack, add the onions, zucchini & lemon slices. Add a drizzle of olive oil & mix well.

Cherry tomatoes
Feta cheese (block)

Step 5

Add the cherry tomatoes & the feta blocks cut in half. Season with salt, pepper & a drizzle of olive oil. Air fry for 20 min at 200°C.

Chicken breast

Step 6

After 20 min, remove the vegetables from the air fryer. Add the chicken to the basket. Season with salt, pepper & a drizzle of olive oil. Continue cooking for 10-12 min at 200°C.

Orzo

Step 7

Meanwhile, in a pot of boiling salted water, cook the pasta according to package directions. At the end of cooking, drain them then keep warm.

Basil (fresh)

Step 8

Once the vegetables and chicken are nicely browned, remove them from the air fryer. Serve the orzo pasta with the vegetables, roasted feta & chicken. Add a few basil leaves, if you have them, and re-season to taste. Enjoy!
