Step 1

Preheat the oven to 240°C. Cut the apricots in half and the chicken in large cubes. Add to the skewers, alternating between the chicken and apricots. * *Check out our tips for this step

Honey

Step 2

On a baking dish, add the skewers and a drizzle of olive oil. Sprinkle rosemary and drizzle some honey. Season with salt & pepper. Bake for 15 minutes at 240°C.

Spring mix lettuce
Almonds (whole, unsalted)
Rosemary (dried)

Step 3

In the meantime, prepare the salad: In a large bowl, add the lettuce, a drizzle of olive oil and vinegar, chopped almonds, a pinch of rosemary, salt & pepper.

Step 4

Serve the skewers with the salad and enjoy!
