White rice (long grain)

Step 1

Cook the rice in a pot of boiling water with a little salt.

Red onion

Finely chop the onion and set aside.

Cut the chicken into cubes and place onto wooden skewers.* *Check out our tips for this step

Step 4

Place the chicken skewers in a pan on medium heat with a drizzle of olive oil. Add the chopped onions into the pan and cook for about 5 minutes. Rotate the chicken skewers halfway through to cook them evenly.

Cayenne pepper

Step 5

Now add the coconut milk, the peanut butter, and the cayenne pepper to your pan, along with a little salt, and mix it all together. Cover your pan and let it cook on medium heat for 10 minutes.

Step 6

Plate the rice first and then place the chicken skewers on top. Scoop any sauce that is left in the pan on top of your chicken. Add some herbs as a garnish if you have any, like parsley or chives. Serve and enjoy!
