Quinoa

Step 1

Cook the quinoa according to package instructions.

Zucchini

Step 2

Wash & cut the zucchini into half-moon slices.

Garlic

Step 3

Heat a drizzle of oil in a pan over medium heat. Add grated garlic, zucchini, salt & pepper. Sauté 2-3 min until the zucchini begins to brown around the edges.

Chicken breast

Step 4

Season the chicken all over with salt & pepper and add it to the pan. Sear, undisturbed for 4-5 min on each side or until fully cooked.

Tzatziki
Arugula

Step 5

Serve the chicken with a side of quinoa, zucchini, tzatziki & salad.

Step 6

Season with salt pepper and add a drizzle of olive oil. Enjoy!
