Red onion

Step 1

Remove the outer layer and cut the run onion in thin strips.

Step 2

Add a drizzle of olive oil to a pot and cook the onions on medium heat for 3 minutes.

Tomato paste
Chicken bouillon (cube)
Chicken breast

Step 3

Add the tomato paste and mix. Add 1 cup of water (per person), the vegetable bouillon cube and the chicken. Cover and cook for 15 minutes on medium heat.

White mushrooms (whole)

Step 4

In the meantime, wash and cut the mushrooms in thin slices.

Step 5

After 15 minutes, remove the chicken breast and set it on a plate.

Step 6

Shred the chicken using 2 forks.

Add the shredded chicken back to the pot along with the coconut milk and mushrooms and cook for 3 minutes.

Serve in a shallow dish with a few cilantro leaves. Season with salt & pepper. Enjoy!
