Stovetop, Pot (small)
Step 1
Peel & slice the onions into thin strips.
Step 2
Heat a drizzle of olive oil in a pot, over medium heat. Add the onions & sauté for 2-3 min.
Step 3
Add the tomato paste* & mix for 1 min. *Check out our tips for this step
Step 4
Add 200ml of water per serving, the chicken & the stock cube. Season with pepper & bring to a boil. Cover & leave to simmer for 15 min, over medium heat.
Step 5
In the meantime, wash & cut the mushrooms in thin slices.
Step 6
After 15 minutes, remove the chicken from the pot & shred it, using 2 forks.
Step 7
Add the shredded chicken back to the pot with the mushrooms & coconut milk. Stir & leave to cook for another 2-3 min.
Step 8
Serve the chicken coconut soup in a bowl & top with slice of red onion & lime zest. Re-season to taste & enjoy !
For a truly flavoursome dish, we suggest adding freshly grated ginger, chili & fresh cilantro.
