A hearty salad that features asparagus!

Step 1
Cut the slices of bread into croutons and brown them in a pan with a drizzle of olive oil for 3 minutes over high heat, stirring. Set aside.
Step 2
Cut the chicken and bacon into slices.
Step 3
In the same skillet, brown the chicken for 2-3 minutes over medium heat. Add the bacon to the pan and sauté for another 4-5 minutes.
Step 4
During this time, wash then cut the ends of the asparagus. Cook the asparagus in a pot of salted water for 3-4 minutes.
Step 5
Once cooked, drain the asparagus and cut them into 2 inch pieces.
Step 6
Wash the lettuce and cut it into pieces.
Step 7
Prepare the sauce. In a tall container or bowl, add the whole egg and the mustard. Add salt and pepper.
Step 8
Use a hand-mixer to blend, then drizzle in the oil (i.e. 140g for an egg). Mix from bottom to top. The sauce should thicken as you add the oil. Tip: if your oil has split, pour a drop of cold water and mix.
Step 9
Add the garlic clove and grate some of the parmesan. You can keep a piece to make some shavings for dressing.
Step 10
Keep stirring until the dressing is ready. You can adjust the consistency with a little water.
Step 11
On a plate, add the lettuce, chicken, bacon, croutons and asparagus. Drizzle with the dressing. You can add parmesan shavings if you wish. It's ready !
