Stovetop, Frying pan
Step 1
In a saucepan of boiling salted water, cook the rice according to the package instructions. Once cooked, drain and keep warm.
Step 2
Meanwhile, wash and cut the peppers, removing the core and seeds. Cut them into thin strips.
Step 3
Cut the chicken into cubes.
Step 4
Heat a drizzle of olive oil in a skillet over medium heat. Add the chicken. Season with salt and pepper and cook for 3 to 4 minutes, stirring occasionally. Set aside off the heat.
Step 5
In the same pan, add the peppers. Season with salt and pepper and cook for 2 to 3 minutes, stirring occasionally. Add a small splash of water, cover, and continue cooking for 5 to 6 minutes.
Step 6
Check that the peppers are cooked, then add the grated ginger and garlic, curry powder, and grilled chicken cubes. Mix well.
Step 7
Drain the pineapple and cut it into chunks, if necessary. Add it to the pan with a tablespoon of syrup per person. Stir and continue cooking for 1 to 2 minutes.
Step 8
Serve the rice in a shallow dish or bowl with the chicken & pineapple stir-fry. Season to taste and it's ready!
