Make sure you have...
Stovetop, Frying pan
Step 1
Add 1 tablespoon of flour per person to a shallow dish. Coat the chicken in the flour.
Step 2
Melt a dab of butter or olive oil in a pan on medium-high heat and cook the chicken for 2 minutes on one side. Season with salt and pepper and baste the chicken with the melted butter (or oil).
Step 3
Flip the chicken, season with salt & pepper and cook for 8 more minutes, while continuing to baste. (Cooking time may vary depending on thickness of the chicken. Cook until no longer pink on the inside.)
Step 4
Once the chicken is cooked, remove from the pan and cut into slices.
Step 5
In a dish, add the arugula, sliced chicken, and slices of avocado. (1/2 an avocado per person). Top with crumbled feta.
Step 6
To make the dressing, mix the mustard, 1/2 tablespoon of vinegar of your choice, and 1 tablespoon of olive oil per person. Mix and pour on top of the salad.
Step 7
Add some more salt & pepper to your taste and sprinkle with pine nuts (optional). Enjoy!
