Step 1
Preheat the oven to 220°C. Arrange the fries on a baking tray covered with baking paper and bake for the cooking time indicated on the packet.
Step 2
Meanwhile, wash then cut the mushrooms into strips.
Step 3
Heat a drizzle of olive oil in a pan over high heat. Add the mushrooms. Add salt and pepper and fry for 5 minutes, stirring regularly, until nicely browned.
Step 4
In a bowl, break the eggs. Season with salt, pepper, then whisk them.
Step 5
Pour the eggs into the pan with the mushrooms. Sprinkle with grated Comté cheese, then cook for 5 to 6 minutes. Once the bottom of the omelette is golden brown, fold it in half and remove from the heat.
Step 6
Remove the fries from the oven.
Step 7
Serve the omelette with the fries. Add a few parsley leaves, if you have them. It's ready !
