Stovetop, Frying pan
Step 1
Pat the chicken dry with a paper towel. Coat the chicken with taco seasoning on all sides.
Step 2
Heat a drizzle of oil in a pan over medium-high heat. Sear the chicken for 5 min on each side, or until chicken is fully cooked through. Transfer to a plate.
Step 3
Wash the pepper & remove the seeds. Dice the pepper.
Step 4
Slice the chicken.
Step 5
In the same pan, heat a drizzle of oil over medium heat and add the tortilla. On half of the tortilla, add half the cheese. Layer on sliced chicken & diced peppers. Add the remaining cheese on top.
Step 6
Fold the empty half of the tortilla over the filling. Cook 2-3 min on both sides, until the cheese is melted. Remove from the heat.
Step 7
Cut the quesadilla in half or thirds. Serve with sour cream & salsa if you have! Enjoy!
