Cauliflower (fresh)

Step 1

Preheat the oven to 210°C. Remove the outer leaves of the cauliflower, cut in half and cut off the stem along with the remaining leaves.

Step 2

Cut a 2 inch "steak" per person. Cut the rest of the cauliflower into florets*. *Check out our tips for this step

Step 3

In a large pot of salted boiling water, add the steaks and florets. Cook on medium heat for 8 minutes.

Maple syrup
Garlic

Step 4

While the cauliflower is cooking, make the marinate. Add the paprika, maple syrup, lemon juice and grated garlic to a bowl. Add salt & pepper and one tablespoon of olive oil (per portion) and mix.

Salez, poivrez et versez 1 c. à soupe d'huile d'olive/personne. Mélangez.

Step 6

After 8 minutes, remove the cauliflower steaks from the water and leave the florets for another 10 minutes.

Step 7

Place the cauliflower steaks on a baking sheet, cover with the marinate and bake for 15 minutes at 220°C.

In the meantime, make the string beans. Cook for about 12 minutes (or less if you like them crispy) in a pot of salted boiling water.

When the cauliflower florets are finished, drain and mash with a fork or add to a blender with salt, pepper and one teaspoon of olive oil (per portion).

Add some lemon zest.

Drain the string beans.

Remove the steaks from the oven and serve with the mashed cauliflower and string beans. Season with salt & pepper and enjoy!
