Step 1
Preheat the oven to 210°C. Cut the cauliflower in half, and then cut one 2-inch steak per person. Cut the remainder of the cauliflower into florets.
Step 2
In a large pot of boiling water, add the steaks and florets. Cook for 8 minutes.
Step 3
In the meantime, chop the garlic. Add it a bowl with 1 tablespoon of olive oil per person, lemon juice, paprika, harissa and maple syrup. Season with salt & pepper and mix.
Step 4
Remove the cauliflower steaks from the pot of water and let the florets cook for an additional 10 minutes.
Step 5
Place the steaks on a baking tray covered in parchment paper. Cover with the marinade and bake for 15 minutes at 210°C.
Step 6
Drain the cauliflower florets. Mash them in a bowl with salt, pepper and 1 teaspoon of olive oil (using a fork or immersion blender).
Step 7
Remove the steaks from the oven and serve it with the mashed cauliflower. Optional: Add some chopped fresh parsley. Enjoy!
