Step 1
Thinly slice the apple and cut the cauliflower into bite-size pieces.
Step 2
Place the cauliflower, apple, parmesan, cilantro and hazelnuts (optional) in the bowl of your Thermomix. Select 7 sec / speed 5.
Step 3
In a small bowl, make the vinaigrette: Whisk together the honey, 1 TB olive oil per portion, the juice of the lemon, salt and pepper.
Step 4
In a shallow bowl add the cauliflower mixture, a few shavings of parmesan, the vinaigrette, and salt and pepper. Mix to combine, top with some lemon zest and serve!
