Step 1
Preheat the oven to 200°C. Wash & slice the cauliflower into florets. Dice the stem & slice the florets into halves or quarters, depending on their size.
Step 2
In a warm pot, add the milk. Season with salt, pepper & nutmeg, if you have some. Add the cauliflower florets & water (30 ml per serving). Cover & leave to simmer for 10 min, over low heat.
Step 3
Once cooked through, drain the cauliflower. In an oven-proof dish (we used a 24 x 17 cm dish here), add the cauliflower & a small ladle of the cooking milk per serving.
Step 4
Add the cream followed by the gorgonzola cut into pieces. Top with roughly chopped walnuts & freshly grated pepper. Bake for 15-20 min at 200°C.
Step 5
Once golden on top, remove the cauliflower & gorgonzola bake from the oven. Serve it in a plate with a side of green salad seasoned to taste. Enjoy !
