Stovetop, Blender, Pot (small), Frying pan

Cauliflower (fresh)

Step 1

Wash & cut the broccoli into florets. Slice the stem into small cubes. Mince the onions and garlic.

Step 2

In a large pot, add a knob of butter, onions, garlic. Cook for 2 minutes. Add a bit of olive oil and the cauliflower. Cook on a medium heat for 5 minutes, stirring, until the cauliflower is golden.

Step 3

Add enough water to cover the cauliflower, cover and simmer for 15 minutes.

Step 4

Meanwhile, cook the bacon in a frying pan until golden.

Parmesan (grated)

Step 5

Add the parmesan (optional) to the pot and blend until the soup is smooth. Add a bit of water until you get your prefered consistancy. Season to taste. Serve the velouté with the bacon bits on top. Enjoy!

Step 6

Add a bit of cream for a decadent touch!
