Step 1

Wash and peel the carrots. Thinly slice them.

Cook the carrots in a pot with a bit of butter, on a low heat for 5 minutes, stirring.

Step 3

Add enough water to cover the carrots, cover and simmer for 10 minutes.

Step 4

Season and blend. Serve the soup with a few crushed hazelnuts on top and some coriander leaves. Add a splash of cream for an extra bit of decadence.
