Stovetop, Frying pan, Pot (small), Colander, Whisk
Step 1
Remove both ends from the leeks*. Cut them in half lengthwise and then a few more times, making long thin strands. *Check out our tips for this step

Cook the bacon in a pan on high heat for 2 minutes.
Step 3
Wash the leeks.
Step 4
Add the leeks to the pan once the bacon is crispy. Add two tablespoons of water per person and let it cook for 5 minutes on medium heat.
Step 5
Bring a pot of salted water to a boil, and cook the pasta according to the instructions on the box.
Step 6
Cook the leeks for 5 more minutes, uncovered.
Step 7
In the meantime, beat the eggs in a bowl with salt and pepper.
Step 8
Add 1 ladle of cooking water per person to the eggs, while whisking constantly. Add the parmesan.
Step 9
Once the leeks are cooked, turn off the heat.
Step 10
Once the pasta is cooked, drain and add it to the pan with the bacon and leeks. Make sure the heat is off and add the egg mixture to the pan. Mix to combine.
Step 11
Serve the pasta with some more grated parmesan. Enjoy!
