In place of the classic French endive and ham gratin, try this modern version with cured ham!
Stovetop, Oven, Frying pan, Baking dish, Colander
Step 1
Preheat the oven to 200°C (400°F). Wash the endives and cut them in half lengthwise.
Step 2
Add the sugar and butter to a frying pan on medium heat. When it starts to bubble, place the endives in the pan, face down. Let them cook for 5 minutes on high heat.
Step 3
While the endives are cooking, mix the crème fraîche and parmesan together in a bowl.
Step 4
When the 5 minutes are up, the endives should be slightly golden. Place them in an oven-safe baking dish.
Step 5
Cover the endives in the crème fraîche-parmesan mixture. Then add pieces of the cured ham/prosciutto on top. Season with a little salt and pepper and bake for 15 minutes.
Step 6
Remove from the oven and serve!
