Vanilla bean
Milk (whole)

Step 1

Preheat the oven to 150°C. Remove the grains from the vanilla bean and set aside. Add the empty bean to a pot with the milk. Bring it to a low boil and then remove from the heat.

Sugar (granulated)
Heavy cream

Step 2

To make the caramel, pour 1/4 cup of sugar per person in a pot with the heavy cream and heat it on low until it starts to caramelize.

Butter (unsalted)

Step 3

Being very careful, add the butter and the vanilla grains. Mix and bring to a boil.

Step 4

Pour 1 tablespoon of caramel at the bottom of each ramekin (1 per person) and let it chill.

Step 5

Separate the egg yolks from the white and add the yolks to a bowl. (You can freeze the whites to use in another recipe).

Step 6

Whisk the yolks with the rest of the sugar (2 tablespoons per person). Little by little pour the warm milk and mix.

Step 7

Pour the egg/milk mixture on top of the caramel in the ramekins. Place the ramekins in a large baking dish filled with a little bit of boiling water. Bake for 30 minutes at 150°C.

Step 8

Remove from the oven and chill. Enjoy!
