Chicken thighs (bone-in, skin on)
Baby potatoes
Herbes de Provence

Step 1

Preheat the oven to 220°C. Line a sheet tray with parchment paper & arrange the chicken on the tray, skin side up. Add potatoes. Sprinkle herbes de Provence on the chicken. Drizzle all over with olive oil. Toss to evenly coat. Season with salt & pepper. Roast in the oven for 25-30 min.

Basil (fresh)

If you have some, thinly slice the basil.

Cherry tomatoes

Step 3

Remove the sheet tray from the oven. Add the tomatoes & roast for an additional 10 mins.

Mozzarella (mini)
Balsamic glaze

Step 4

Remove from the oven. Add mozzarella & drizzle the balsamic glaze over top. Garnish with sliced basil & serve ! Enjoy !
