Brussels sprouts (fresh)

Step 1

Thinly slice the Brussels sprouts, using a knife or mandoline.

Step 2

Place the Brussels sprouts in a colander or sieve and rinse well.

Cranberries (dried)
Pistachios (shelled, raw)

Step 3

In a large salad bowl, add the sprouts, cranberries and pistachios.

Parmesan

Step 4

Using a peeler, thinly shave the parmesan and add to the bowl.

Step 5

Add 1 TB olive oil and 1 TB vinegar per portion. Season with salt and pepper, toss to combine and serve!
