Step 1

Heat a pot of boiling water. Wash & cut the broccoli into florets. Slice the larger florets in half & the stem into small cubes. Roughly chop the nuts with the back of a large knife.

Step 2

Put the broccoli in the boiling water with a pinch of salt. Cook for 7 minutes then drain and rinse with cold water.

Spring mix lettuce

Step 3

In a large bowl, mix together the broccoli, salad, crumble goat cheese, nuts, salt & pepper and a drizzle of olive oil. Serve and enjoy!
