Broccoli (fresh)

Step 1

Preheat the oven to 200°C. Wash & slice the broccoli into florets. Slice the florets in halves or quarters, depending on their size.

Step 2

In a pot of salted boiling water, pre-cook the broccoli for 3-4 min, over medium heat. Drain the broccoli.

Yellow onion

Step 3

Meanwhile, peel & small dice the onions.

Herbes de Provence

Step 4

In a mixing bowl, crack the eggs. Season with salt, pepper & 'herbes de Provence'. Beat the eggs using a fork or a whisk.

Step 5

Oil the bottom of a mold using a brush (we used a 23 cm diameter dish here). Place a sheet of baking paper in the bottom of the mold, then oil it again.

Cheddar (shredded)

Step 6

Add the drained broccoli & onions to the mold. Pour the whisked eggs & sprinkle with the grated cheddar. Bake in the oven for 15-20 min at 200°C.

Step 7

Once golden & cooked through, remove the broccoli & cheddar frittata from the oven. Serve it with a side of green salad seasoned to taste & enjoy !
