Yellow onion

Step 1

Peel and chop the onion, then add it to a pot with a drizzle of olive oil. Sauté for 1–2 minutes.

Broccoli (fresh)

Step 2

Wash & cut the broccoli into florets. Slice the larger florets in half & the stem into small cubes.

Add the broccoli to the pot and cook for 2 minutes. Add water to cover (about 1 cup per portion).

Step 4

Season with salt and pepper and bring to a boil. Cover and simmer over medium heat for 15 minutes.

Heavy cream

Step 5

After 15 minutes, add the cream and puree until smooth.

Step 6

Tip: If the soup is too thick, add a little water.

Blue cheese

Step 7

Serve, topped with crumbled blue cheese.
