Step 1
Preheat the oven to 400°F/200°C. Wash and thinly slice the leeks.
Step 2
Melt a dab of butter in a pan over medium-high heat and add the leeks.
Step 3
Season with salt and pepper; add the sugar and cook for 5 minutes, stirring regularly.
Step 4
Place the crust in a tart pan or wide, shallow pie pan and pierce its surface with a fork. Bake for 5 minutes.
Step 5
Add the balsamic vinegar to the pan and cook for 5 more minutes.
Step 6
In a mixing bowl, whisk together the eggs, milk, cream, salt and pepper.
Step 7
Spread the leeks evenly in the crust.
Step 8
Pour the egg mixture into the crust and top with the sliced brie.
Step 9
Season with salt and pepper and bake at 400°F/200°C for 30 minutes.
Step 10
Serve with a green salad and it's ready to eat!
