Flour tortilla (medium)

Step 1

In a hot pan, heat up the tortilla. 30 seconds each side.

Avocado

Step 2

Place the tortilla on a plate. Cut the avocado in half, cut into pieces and scoop out the flesh with a fork or spoon. Place it on the tortilla and mash it with a fork.

Egg

Step 3

Heat a drizzle of olive oil in a frying pan and add the eggs. Scramble them with a spatula, add salt and pepper and cook for 2-3 minutes over medium heat.

Prosciutto
Cilantro (fresh)

Step 4

Add the scrambled eggs and then the prosciutto on top of the crushed avocado. Optional: add a pinch of cayenne pepper if you have it and some cilantro leaves. Eso!
