Step 1
Mix the flour, baking powder and a pinch of salt in a bowl.
Step 2
Separate the yolk from the whites.
Step 3
Scramble the yolks in another bowl and incorporate the milk.
Step 4
Add a pinch of salt to the whites then bring them to a peak with an electric mixer.
Step 5
Add the milk/egg yolk mixture to the dry ingredients and mix until fully combined.
Step 6
Add the melted butter and mix again.
Step 7
Slowly incorporate the egg whites using a spatula, being careful not to break them.
Step 8
Roughly mix half the amount of jam into the pancake batter.
Step 9
Heat a frying pan to medium and lightly butter. Add a small ladle of batter.
Step 10
Cook for 2-3 minutes on each side over low heat.
Step 11
Turn them over once bubbles form on the surface.
Step 12
Continue until all the batter is used.
Step 13
Once the pancakes are cooked, serve them with a dab of butter and the rest of the jam. Enjoy!
