Step 1
Preheat the oven to 200°C. Wash & slice the bell peppers, removing the core & pips. Small dice them.
Step 2
Peel & small dice the onions.
Step 3
Heat a drizzle of olive oil in a pan, over high medium-heat. Add the onions & bell peppers. Sear for 5 min, stirring regularly.
Step 4
Meanwhile, in a mixing bowl, crack the eggs. Season with salt, pepper & minced coriander, if you have some. Whisk the eggs using a fork or a whisk.
Step 5
Oil the bottom of a mold using a brush (23cm diameter for 4 people). Place a sheet of baking paper in the bottom of the mold, then oil it again. Add the cooked veggies & pour le whisked eggs overtop.
Step 6
Add the crumbled ricotta cheese & season to taste. Bake for for 15-20 min at 200°C.
Step 7
Remove the frittata from the oven and unmold it. Re-season to taste & serve with a side of green salad. Enjoy !
