Step 1
Preheat the oven to 180°C. Wash & halve the peppers, removing the heart & seeds. Dice the peppers.
Step 2
Wash & dice the tomatoes.
Step 3
Heat a drizzle of olive oil in a pan, over high medium-high heat. Add the tomatoes, peppers, 'piment d'Espelette' & 'herbes de Provence'. Season with salt & pepper. Sauté for 4-5 min, stirring.
Step 4
Meanwhile, prepare the crumble topping. In a mixing bowl, add : the flour, grated parmesan & softened butter. Season with salt & pepper. Mix the ingredients, using your hands, until you obtain a shortbread-y texture. Add the crumbled feta cheese & incorporate it into the crumble.
Step 5
In an oven-proof dish, add : the tomatoes & peppers. Add a small spoonful of sugar (optional). Mix & spread the crumble topping over the veggies. Bake for 45-50 min at 180°C.
Step 6
Once the bell pepper & feta crumble is golden on top & cooked through, remove it from the oven. Serve it alongside a green salad & enjoy !
