Beets (cooked)

Step 1

Preheat the oven to 200°C. Quarter the beets.

Step 2

Put the beets on a baking tray with a drizzle of olive oil and a pinch of salt. Bake for 20 minutes.

Greek Yogurt (plain)
Lemon

Step 3

Mix the yogurt, lemon juice and zest, salt & pepper. Set aside.

Pistachios (roasted)

Step 4

Roughly chop the pistachios.

Step 5

On a plate, spread the yogurt and add the roasted beets on top with the pistachios. Drizzle olive oil and season with salt & pepper. (Optional: add some mint leaves). Enjoy!
