Step 1
Cut the chicken into cubes.
Step 2
Prepare the marinade. In a bowl, combine the beer, grated garlic, and lemon juice. Season with salt and pepper, and stir. Add the chicken and let it marinate in a cool place for at least 30 minutes.
Step 3
Preheat the oven to 200°C. Wash and cut the zucchini into half-moons.
Step 4
Wash and cut the potatoes in half or into quarters, depending on their size.
Step 5
On a sheet tray, add the potatoes and zucchini. Brush them with a drizzle of olive oil, season with salt and pepper, and mix everything together. Bake for 30 to 35 minutes at 200°C.
Step 6
Thread the chicken pieces onto the skewers.* *See our tips for this step.
Step 7
Heat a drizzle of olive oil in a frying pan over medium heat. Add the chicken skewers and cook for 4 to 5 minutes on each side, until cooked through and golden brown.
Step 8
Once the vegetables are cooked through and golden brown, remove the sheet tray from the oven.
Step 9
Serve the roasted vegetables on a plate with the beer-marinated chicken skewers. Re-season to taste. It's ready!
If using wooden skewers, soak them in water for 30 minutes before grilling (pan-frying or on the barbecue) to prevent them from burning.
