Step 1

Preheat the oven to 200°C. Dice the peppers into small cubes.

Dice the onions.

Add a drizzle of olive oil to a pan on medium heat. Cook the onions and peppers for 6-7 min.

Crushed tomatoes
Beef (ground-beef patties fresh)

Step 4

Add the ground beef to the pan, 1/3 of the diced tomatoes (optional: Add a Mexican spice blend & ground cumin). Simmer for 5 more minutes.

Crème fraîche
Corn tortilla (soft taco)
Beef (ground-beef patties fresh)

Step 5

Fill each tortilla with crème fraîche and the meat mixture. Roll each enchilada and place in a baking dish.

Crushed tomatoes
Cheddar (shredded)

Step 6

Cover with the remainder of the diced tomatoes and grated cheddar and bake for 15 minutes. Serve the enchiladas with a drizzle of lime juice & hot sauce. Enjoy!
