Preheat the oven to 200°C. Dice the peppers into small cubes.

Add a drizzle of olive oil to a pan on medium heat. Cook the onions and peppers for 6-7 min.

Tomato sauce
Beef (ground-beef patties fresh)

Fill each tortilla with crème fraîche and the meat mixture. Roll each enchilada and place in a baking dish.

Cover with the remainder of the diced tomatoes and grated cheddar and bake for 15 minutes. Enjoy!
