Step 1

Make the sauce by mixing the pesto with 1 tablespoon of olive oil per person.

Option: If you have some, lightly brown some pine nuts in a frying pan on the stove.

Step 3

Spread the slices of beef carpaccio out on a plate, add the arugula on top, then sprinkle some slices of parmesan, and drizzle the pesto sauce. (And sprinkle the toasted pine nuts if you have them.) Salt and pepper to taste, drizzle some olive oil, and enjoy!
