Step 1
Preheat the oven to 200°C. Peel & small dice the sweet potatoes.
Step 2
On a sheet tray lined with parchment paper, add the sweet potatoes Drizzle over in olive oil & season with salt & pepper. Toss to evenly coat & roast in the oven for 10 min at 200°C.
Step 3
Meanwhile, wash & slice the broccoli into florets.
Step 4
In a pot of salted boiling water, cook the broccoli for 5-6 min, until tender. Drain & keep warm.
Step 5
Remove the dish from the oven & add a splash of water (optional). Add the salmon filets & season them with salt, pepper & a pinch of smoked paprika. Bake for another 15 min at 200°C.
Step 6
Meanwhile, prepare the mayonnaise mix. In a small bowl, combine : the mayonnaise, smoked paprika, lime zest & juice & freshly grated pepper.
Step 7
Once nicely golden, remove the veggies & salmon from the oven.
Step 8
Serve the grilled salmon with the roasted sweet potatoes & broccoli. Top with the crumbled feta & re-season to taste. Enjoy !
