Oven, Pot (small), Stovetop, Peeler, Parchment paper, Colander
Step 1
If needed, defrost your cod. Preheat the oven to 200°C. Wash the orange and lemon and cut into slices. Set aside.
Step 2
Peel and finely chop the shallots and set aside.
Step 3
On a piece of parchment paper, place the fish in the center and add the chopped shallot, a drizzle of olive oil, salt & pepper.
Step 4
Add the slices of citrus, alternating between lemon and orange.
Step 5
Close the parchment paper packets and cook for 10 minutes.
Step 6
While the fish is cooking, cook the rice according to the instructions on the package and drain at the end of cooking.
Step 7
Remove the cod from the oven. Serve with the rice and enjoy!
For a truly flavoursome dish, we suggest adding some herbes de Provence or a sprinkle of piment d'Espelette.
