Step 1
Preheat the oven to 180°C. Unroll the pie crust and press it into a pie plate. Pierce it a few times using a fork.
Step 2
Once the oven has preheated, cook the crust for 5 minutes.
Step 3
While the crust is in the oven, cook the bacon in a frying pan on high heat until golden.
Step 4
In a bowl, whisk together the eggs, milk, heavy cream, salt and pepper.
Step 5
After 5 minutes, remove the pie crust from the oven. Sprinkle the crumbled bacon and cherry tomatoes (cut in half) into the pie crust.
Step 6
Shred the mozzarella and spread evenly. Pour the egg mixture over the top.
Step 7
Optional: Add a few branches of thyme or oregano
Step 8
Add salt & pepper and bake at 180°C for 45 minutes, or until the crust is golden brown.
Step 9
Let it rest for 10 minutes before eating. Serve with a green salad and it's ready to eat!
