Step 1

Slice the ends of the grapefruit, then remove the skin. Slice the grapefruit into rounds.

Beets (cooked)

Step 2

Slice the beets into thin rounds.

Avocado

Step 3

Slice the avocados in half. Remove the skin & cut into thin slices.

Greek Yogurt (plain)
Sunflower kernels
Mint (fresh)

Step 4

In a plate, spread the greek yogurt. Add the beetroot, grapefruit & avocado slices. Season with a drizzle of olive oil, salt & pepper & top with sunflower seeds & fresh mint, if you have some. Enjoy !
