Cannellini beans (cooked)

Step 1

Strain the beans, rinse under cold water & place in a bowl.

Avocado

Step 2

Cut the avocado in half, remove the pit and cut into cubes. Add to the bowl with the beans.

Garlic

Step 3

Peel and very finely mince the garlic (removing the germ).

Parsley (fresh)

Step 4

Wash & finely mince the parlsey.

Lemon
Paprika

Step 5

Prepare the sauce. In a small bowl, mix : the garlic with 1 tbsp of olive oil per person, the lemon juice & zest, chopped parsley & paprika. Season with salt & pepper to taste.

Step 6

Serve the beans & avocado salad topped with the vinaigrette & a side of toasted bread or croutons. Mix to combine & enjoy !
