Cook the artichokes in a pot of boiling water for 40 minutes. (Or you can steam them for 50 minutes.)

Whole grain mustard
Olive oil
Red wine vinegar

Step 2

Meanwhile, mix the olive oil, vinegar and mustard together. Season with salt and pepper.
