Step 1

Preheat the oven to 240°C. Cut the apricots in half, discarding the pits.

Duck breast

Step 2

Score the duck skin in a criss-cross pattern, using a knife. Skin side down, place the duck breast in an oven safe dish.

Step 3

Arrange the apricot halves around the duck and sprinkle with rosemary. Drizzle the honey and olive oil, add salt & pepper, and bake at 240°C for 10 minutes.

After 10 minutes, flip the duck breast and cook for an additional 15 minutes at 180°C.

Step 5

Cut the duck breast in slices on a slight angle and serve with the roasted apricots and a side salad. It's time to eat!
