Flour (all-purpose)
Sugar (granulated)
Butter (unsalted)

Step 1

Take the butter out of the fridge so gets to room temperature. Preheat the oven to 180°C. In a mixing bowl, add: the flour, 3/4 sugar, a pinch of salt and the butter. Rub everything together using your fingers until you have a sandy texture.

Apricots (fresh)

Step 2

Wash and quarter the apricots, removing the stones. Add the rest of the sugar to the apricots, then add them to an oven-proof dish, a proportionate size to the quantity of fruit. The ideal crumble should have a 4-5cm layer of fruit.

Step 3

Sprinkle the crumble mixture on top. Bake for 20 to 30 minutes. Remove the crumble when the top is nice and golden.

Step 4

Eat hot or cold, alone or with a scoop of ice cream or a dollop of crème fraîche.
