Apricots (fresh)

Step 1

Preheat the oven to 210°C. Rinse the apricots, chop in half and remove the pit.

Flour (all-purpose)
Sugar (granulated)
Vanilla sugar

Step 2

In a bowl, mix: flour, sugar, a pinch of salt (optional: vanilla sugar).

Egg
Milk (whole)

Step 3

Add in the eggs, and the milk bit by bit, mixing continuously so you don't get any lumps.

Butter (unsalted)

Step 4

Add in the melted butter.

Apricots (fresh)

Step 5

Grease your cake pan, spread out the apricots on the bottom and pour the batter on top.

Step 6

Cook for 10 minutes at 210°C, then lower the heat to 180°C and cook for 20 minutes more.

Step 7

Serve lukewarm or cold (optional: decorate with some icing sugar on top).
