Apricots (fresh)

Step 1

Preheat the oven to 210°C. Rinse & slice the apricots in halves - use rips apricots. Discard the pit.

Flour (all-purpose)
Sugar (granulated)
Vanilla sugar

Step 2

In a large bowl, combine : the flour, sugar, a pinch of salt & vanilla sugar (optional).

Egg
Milk (whole)

Step 3

Incorporate the eggs. Pour the milk in little-by-little, mixing continuously.

Butter (unsalted)

Step 4

Melt the butter & mix it into the bowl.

Step 5

Grease your cake pan (we used a 23 cm diameter dish here).

Step 6

Add the apricots spreading them out evenly in the cake pan. Pour the cake batter on top* & bake for 10 min at 210°C. Lower the heat to 180°C & continue baking for another 20 min. *Check out our tips for this step

Step 7

Once golden, remove the apricot clafoutis from the oven. Leave to cool slightly before sprinkling with icing sugar. Serve & enjoy !
