Step 1
Preheat the oven to 220°C. In the mixing bowl, mix the softened butter and sugar* for 30 seconds / speed 3, until you have a creamy texture. Next, add the eggs, a pinch of salt and mix again for 30 seconds / speed 3. *Check out our tips for this step
Step 2
If you have any, you can replace 1/4 of the flour with ground almonds, for an even more moist cake! Pour this into the first mixture, then mix for 10 sec / speed 3.
Step 3
Wash and peel the apples, and chop them into quarters.
Step 4
Put half the apples at the bottom of a greased cake tin, cover with the batter and then add the rest of the apples. Sprinkle on a tsp sugar (Optional: if you have any, top with flaked almonds.)
Step 5
Bake for 220°C for 10 min, then lower the temperature to 180°C and cook for 30 min. Insert a knife to check that the cake is cooked through. Wait for at least 10 min before eating (it's even better the next day!).
If you wish to reduce sugar quantities, you can remove up to ⅓ of the sugar in this recipe without altering flavor.
