Eggplant

Step 1

Wash & slice the eggplants in half lengthwise. Using the tip of a sharp knife, score the flesh without piercing the skin.

Step 2

Add the eggplant to the air fryer basket with the rack. Add a drizzle of olive oil & season with salt & pepper. Air fry for 20 min at 200°C.

Black olives (pitted)

Step 3

Meanwhile, drain, then chop the black olives.

Tomato sauce
Tuna (canned)
Garlic
Bread crumbs (plain)
Parmesan

Step 4

Prepare the filing. In a mixing bowl, mix : the tomato sauce, olives, tuna, grated garlic, half of the breadcrumbs & grated parmesan.

Step 5

Once cooked through, remove the eggplant from the air fryer & gently remove the cooked flesh, using a spoon. Keep the eggplant shells for plating.

Step 6

Combine the roughly chopped eggplant flesh with the stuffing mix.

Step 7

Fill the eggplant shells with the mixture & top with the remaining breadcrumbs & grated Parmesan. Place them back into the air fryer basket & air fry for another 5 min at 200°C.

Step 8

Once golden brown & crispy, take the eggplant out of the air fryer. Serve the tuna-stuffed eggplant on a plate with a side of green salad dressed to taste. Enjoy!
