Air Fryer Trout with Roasted Veggies & Yogurt Sauce

Ingredients
Make sure you have...
Utensils
Frying pan, Stovetop and Air fryer.
Recipe

Step 1
Peel the carrots & slice them diagonally.

Step 2
Wash & cut the cauliflower into florets. Cut them in half or quarters depending on their size.


Step 3
Add the carrots, cauliflower & drained chickpeas to the air fryer basket with the rack. Season with a drizzle of olive oil, salt, pepper & thyme. Toss everything together & air fry for 20-25 min at 200°C.


Step 4
Meanwhile, prepare the yogurt sauce. In a bowl, combine : the yogurt, a drizzle of olive oil & the zest & juice of the lemon. Season with salt & pepper.

Step 5
After 25 min, add the trout fillets to the air fryer basket. Season with salt & pepper & continue cooking for 10 min at 200°C.
Step 6
Once the vegetables are golden & the trout cooked, remove them from the air fryer.
Step 7
Serve the trout filet on a plate with the roasted vegetables & yogurt sauce. Top lemon zest & re-season to taste & enjoy!
